Vinegar obtained from spontaneous (or natural) acetification of Manzanilla, aged for years in our cellars in Sanlúcar de Barrameda according to the traditional Soleras and Criaderas method. Its prolonged aging and the quality of the wines that originate it produce a rich and wide aromatic range and a harmonious and intense bouquet.
Slightly sweet due to aging with Pedro Ximénez wine, it is the sweetest of our vinegars. But its sweetness continues to make its elegant acidity perceptible.
Pedro Ximénez Reserve Vinegar forms, due to its organoleptic characteristics, a special combination with meat dishes, roasts, cheese-based salads, reductions and desserts.
Intense dark mahogany color.
Soft acetic aroma with a lot of vinosity, accompanied by a wonderful range of raisin and plum aromas.
Slightly sweet flavor, delicately liqueur-like and balanced in the mouth. It contains a wide range of aromatic nuances and a long and captivating aftertaste, with hints of raisins.
Due to its organoleptic characteristics, it is a delicious combination with meat dishes, salads, cheeses, reductions and desserts.
Perfect for caramelizing, for example, onions.
Excellent for giving depth, vivacity and a veiled sweetness to cocktails without overwhelming the other ingredients.
