Barbadillo Aceto di Vino Jerez Riserva

Vinagre de Jerez Reserva has been obtained through the spontaneous (or natural) acetification of Manzanilla, aged for years in our cellars in Sanlúcar de Barrameda using the traditional Soleras and Criaderas method. Its prolonged aging and the quality of the wines that originate from it produce a rich and wide aromatic range, and a harmonious and intense bouquet.
Historically, the peculiarities of the wine sector and family pride meant that no one wanted to admit that some of their wines were “deviated” into vinegar, which is why this product was euphemistically called “stewed wine”. Therefore, as a residual, they were only sold between employees, family and friends.
Vinagre de Jerez Reserva is the most powerful, for true lovers of the most extreme vinegars and strong cuisine.
A vinegar with a wonderful mahogany color, bathed in amber tones and an intensity appropriate to its long aging.
Its acetic aromas have notes of wine and spices, which make it particularly suggestive, recalling the ancient Manzanillas from which it comes.
Its unmistakable nuances of organic aging stand out, with those soft aromas of yeast (flower veil), mixed with typical touches of the old and excellent woods in which it matures.
It is recommended for dressings and salads with a rich flavor.
Excellent in cold soups such as Gazpacho and to give depth, vivacity and a veiled sweetness to cocktails without overwhelming the other ingredients.
