ISH London Dry Gin

ISH London Dry Gin is 5 times distilled in a traditional pot still in the heart of London. The highest quality English grain spirit is used along with twelve botanicals: juniper, coriander seed and angelica root blended with almond, orris root, nutmeg, cinnamon, cassia, liquorice, savory and lemon are macerated for 24 hours before the distillation begins, encouraging the expression of each botanical. After a two week resting period which allows the botanicals to become fully integrated, the –ish concentrate is blended. The ratio of –ish concentrate to alcohol and water is much higher than average, providing a more compelx mouth-feel and body. 

Tasting:

Nose: intense juniper, rounded by earthy coriander with hints of citrus 

Palate: an initial sweetness from the orange followed by a complex harmony of flavors. More than in flavor, the extra juniper provides a desirable crisp dryness
