SOTO Junmai Daiginjo is a fine Japanese sake produced in the renowned Niigata prefecture, famous for its pure waters derived from melting mountain snow. The word "Soto" means "outside" in Japanese, celebrating the purest elements of nature: finely milled rice and crystal-clear mountain water. This sake is made exclusively with Gohyakumangoku rice, polished to 50%, and has an alcohol content of 15.5%. On the nose, it offers an extremely aromatic fruity and floral bouquet, with notes of green apple and lemon zest. On the palate, it is fresh and round, with hints of cucumber, melon, and anise, leading to a dry and clean finish. The texture is full-bodied and creamy, with a crisp and clean finish. Thanks to its versatility, SOTO Junmai Daiginjo pairs beautifully with a wide range of dishes, including sashimi, unagi (grilled eel), yakitori (chicken skewers), miso-based dishes or soy sauce, oysters, and cured meats.
