The soul of Okinawa in a unique rum

ONE RUM is a Japanese craft rum produced in Okinawa by One Spirits at the historic Mizuho Shuzo distillery, founded in 1848. It was created to enhance local sugarcane and to offer an authentic interpretation, far from Caribbean styles yet deeply rooted in its territory. The 100% Okinawan sugarcane, sourced from eight islands, is selected and classified into three aromatic profiles – light, medium, and intense – distilled separately and then blended. ONE RUM is the first in Japan to use the dunder fermentation method: part of the liquid residue from distillation is reused in the next fermentation, boosting yeast vitality, releasing new aromas, and adding greater complexity to the spirit. Each fermentation also employs ONERUM yeast, isolated directly from local sugarcane fields, ensuring a distinctive and inimitable character. On the nose it is herbal and slightly briny, on the palate it is dry, mineral, and citrusy, with an elegant marine finish that evokes the nature of Okinawa. Versatile in mixology, it shines in classics such as the Daiquiri, Mojito, and Cuba Libre, but also pairs perfectly with soda and citrus, ideal at the table. It matches exceptionally well with chocolate and wagashi, the traditional Japanese sweets, and is also a refined ingredient for both Eastern and Western pastry making. Distilled in copper pot stills, non-chill filtered, and bottled in small batches, it represents an authentic, artisanal rum deeply connected to its land of origin.
