Akashi Blue Whiskey undergoes a unique maturation process that shapes its distinctive flavor. Starting from maturation in ex-shochu barrels, the whiskey is given a subtle base. The subsequent maturation in ex-bourbon barrels adds classic vanilla notes and delicate spice aromas. A final finish of 12 months in sherry casks completes the aromatic profile by adding rich fruity notes and a refined nuttiness. Additionally, distillation is carried out in specially made smaller pot stills, which differ significantly from the larger stills commonly used in Scottish and traditional Japanese distilleries.
