Gin Four Pillars Rare

Four Pillars Rare Dry Gin is the gin that started the Four Pillars distillery, founded in 2013 in Healesville, in Australia's Yarra Valley, by Cameron Mackenzie, Stuart Gregor and Matt Jones. It is distilled in small batches of fewer than 450 bottles each in the Carl copper pot still named "Wilma", and bottled at 41.8% ABV. Ten botanicals bring together Asian spices, native Australian ingredients and Mediterranean citrus: juniper, coriander, cardamom, star anise, cinnamon, lavender, angelica root, lemon myrtle and Tasmanian pepperberry leaf. Instead of the usual dried peel, whole fresh oranges, peel and flesh, are distilled, giving the gin a highly aromatic citrus character. Tasting: Nose: delicate juniper and intense orange, with the warmth of pepperberry, anise and coriander and a light floral note Palate: full and balanced, with pepper, sweet orange and juniper; spicy finish of coriander, anise and green cardamom Excellent in a Gin & Tonic with a slice of orange, in a Negroni or neat and well chilled.
