Pet nat is the oldest system of making a sparkling wine in a natural bottle, there is a bottling of the wine at the crescent moon, with the addition of dried grape juice or natural residual sugar from the first fermentation which gives the refermentation in the bottle. The result is a more persistent and long-lasting natural sparklingness, as it is not filtered and keeps the bubbles for longer.
