A cask-aged edition of Santamanía's London Dry Gin, matured in a French oak casks for several months in their 16th century stone cellar. The gin is made with a base spirit of Tempranillo grapes, but other changes have occured with this barrel-aged expression. Due to the transformation that will occur during the gin's maturation, the Spanish craft distillers reorganised the proportions of the the botanicals, resulting in a familiar flavour profile complimented by oaky spice and creamy vanilla.
