The manufacturing process of this peach gin consists in selecting the fruits, verifying the right ripeness and after having pitted them, they are infused in alcohol. The juniper distillate itself is the result of aromatic extraction from juniper fruits infused in grain alcohol.
A part of them will be used by extracting the perfumes in distillation and the remainder is decanted, and then joined to the final mass.
The product obtained is left to decant for a few days and then taken from the container "by gravity". This is followed by a non-forced roughing filtration in cartons and a subsequent fine filtration without depleting the distillate of its most aromatic components.
This process involves some important attention. It is always advisable to avoid exposure of the distillate to direct light or any heat sources. Furthermore, if brought to temperature from the freezer, it could give rise to possible suspensions or thickening. This is to be attributed exclusively to the absolute authenticity of the product and to the "non-industrial" processing techniques specifically chosen.
