It is a distillate obtained exclusively by infusing cardamom seeds in juniper distillate, without adding any essential oil or chemical flavoring.
The manufacturing process is quite complex and fragmented, developing in several stages: from the softening of the seeds in a water bath to the extraction of the aromas, from the crushing of the pod to the subsequent decanting.
Further and complementary phases, studied in fractions of time, complete the infusion process and contribute to the characterization of the product.
Filtration is also done "by hand". The distillate is taken "by gravity" and passed through conical sieves in linen and cotton specially made to keep the organoleptic profile as unaltered as possible. In this way, forced filtrations are avoided which, in some cases, could impoverish the distillate of its more aromatic components.
This process involves some important attention. It is always advisable to avoid exposure of the distillate to direct light or any heat sources. Furthermore, if brought to temperature from the freezer, it could give rise to possible suspensions or thickening. This is to be attributed exclusively to the absolute authenticity of the product and to the "non-industrial" processing techniques specifically chosen.
