A pioneer, Richard Seale of Doorly's and Foursquare Distillery was among the first to experiment with different cask types. Doorly's XO is a perfect example: rums aged 6 to 12 years and finished in ex-Oloroso sherry casks. Gold turning to amber. Tropical fruit and vanilla over soft toffee on the nose; smooth and flavourful on the palate, with banana and orange.
