Ume plums from Wakayama are hand-picked and whole-pressed with pure water from the Hyogo region and organic cane sugar. These unique fruits resemble small plums or damsons, with a light fuzz on the skin similar to apricots and a pitted stone reminiscent of peaches. Harvest takes place while still unripe, in June, just before full ripening, following a traditional method that preserves their freshness.
Kimino was born in Japan as a community of farmers and beverage producers, inspired by the philosophy of “Kanso,” the art of using only what is essential. Seasonal fruits are hand-selected and combined exclusively with mountain water from the Hyogo region in Kansai, resulting in beverages with an authentic, pure, and balanced taste.
